This decaf is a perfect balance for filter or espresso, with tasting notes of grape and brown sugar. This decaf will make for a delicious balanced and syrupy batch brew or flat white.

Planadas, Tolima, Colombia

The Colombian Department of Tolima is nested in the heart of Andean region in the center-west of the country.

The geographical location, topographic diversity, and range of altitudes make Tolima one of the most favorable and unique departments for coffee production, allowing for harvesting throughout the year. Coffee farms are scattered on the mountain ranges of Santa Marta, La Macarena, and the western slopes of the eastern Cordilleras. Farms here are predominantly smallholder owned, and the farmers have made concerted efforts in the last ten years to produce specialty coffee that reveals the full character of the region’s terroir. The organic approach to coffee cultivation in Tolima is well-known and highly demanded around the world. Certifications like Fairtrade, Organic, Rainforest Alliance, UTZ, and Bird Friendly can be found throughout the region. Selective manual harvesting, attentive processing, and careful post-harvest sorting all contribute to the growing recognition of Tolima as a coffee producing region.

Coffee Process:

Sugarcane Decaf

Sugarcane decaffeination utilises a naturally occurring compound, ethyl acetate (EA) to decaffeinate coffee. The EA process is relatively simple. The coffee beans are moistened with water and EA is circulated throughout. The EA binds with the caffeine in the bean and extracts the caffeine while leaving most of the other flavour compounds. After the desired caffeine level is reached, the EA residue on the beans is removed by steaming them.

The Sugarcane decaffeination process magnifies sweetness and acidity, producing an excellent decaffeinated coffee.

This coffee, previously known as Passiflora, is made up of 25 certified organic members of the AGPROCEM association, located around the Montalvo district of Planadas, Tolima, who in 2013 decided to form their own organisation. Their goals were to find colleagues who shared the same ethics and mission; to promote coffee quality, educate, create economic development and focus on conservation of the environment.

This area is only just emerging from the shadow of years of armed conflict with coffee production, aligned with fair supply chain practices, playing an important role for the future.
